Where are you from? 

Italians, but now adopted by the Pityusic Islands. Francesco and I live in Ibiza, while our partner Matteo has been in Formentera for many years.

 

How did the idea to open a restaurant in Ibiza come about?

We had been looking for the right location for a few years to open A MI MANERA in Ibiza and give continuity to our project in Formentera, when this winter the right opportunity finally came, and here we are!

 

What is your concept?

Everything revolves around our vegetable garden. We use fresh, natural and, as far as possible, homemade products. 

 

How did you create your menu and what do you propose?

Our menu offers revisited dishes from Italian and Mediterranean cuisine, a wide use of home-grown vegetables, and, our speciality, grilled meat.

 

Tell us about the products you use... we know they are "zero food metres"...

Exactly! Our vegetables grow a few metres from the kitchen. It's not uncommon to see our chefs picking up products they then use straightaway.  

In our garden we also have some tables, so from the garden to the table in the true sense of the word.

 

What are your specialities?

Tempura zucchini flowers stuffed with ricotta flavoured with anchovies; a mi manera spaghetti with home-grown cherry tomatoes and basil and burrata cheese; various cuts of wagyu kobe meat cooked in a charcoal oven.

 

How's the atmosphere in the restaurant?

The contact with nature is obviously the master here. The restaurant is immersed in an oasis of tranquillity, scents and colours, with a touch of pop given by our art director Manu Ciotti in homage to the vibrations of this splendid island.

 

We’ve been really glad to see that, like ND, you are committed to an eco-sustainable philosophy. Can you tell us about it?

Sure. We use many products, strictly organic, from our vegetable garden. Our tablecloths are biodegradable, so they don't need to be washed in water. This way we can save it and use it mainly to take care of the soil. Our napkins are made of recycled materials, and we use corn starch straws. In short, eco-sustainability is at home for us.

Welcoming, surprising, unique.

 

What do you expect from this first season on the island?

Our goal is to make ourselves known and appreciated for the quality of the products we use and for the attention in the service. 

We are very pleased that our customers feel at ease and come back to visit us with friends and family. Word of mouth is very important in a small island like Ibiza.

 

Future projects?

For now we are focusing on our new restaurant in Ibiza, but if the opportunity arises, we'll be happy to open a third restaurant... we already have some ideas for the next location.

 

What is your favourite place in Ibiza?

Aguas Blancas.
